Cake decorating help- Gum paste flowers vs. Fondant?
Gum paste is used for flowers that need to be rolled out very thin or when the edges of petals must be ruffled. It can be rolled more thinly without breaking than fondant, which is required for delicate flowers.
You can also mix equal parts of fondant and gum paste together to make a fortified fondant, for decorations that will hold their shape without stretching. It is good for things like draping, overlays, and flowers with minimal ruffling.
Wilton has a nice book and flower cutter and tool set (link in Sources); you can find it at Michaels, Hobby Lobby, and other craft stores that sell Wilton products. Wilton also has a 4 week course, Fondant %26amp; Gum Paste. If you haven't taken this, you can visit the Wilton site and find locations that offer the classes in your area. In this course you learn the carnation, daisy and fantasy flower.

This is a pretty good website for info on what you are looking for. It also has links to other helpful sites as well as recipes and book/supply recommendations. I came across it recently as I, just like you, am interested in expanding my horizons in cake decorating.
Check out Amazon.com for cake decorating 'how to' books they have some good deals (including FREE shipping) and a great selection. I purchased the 'Cakes to Dream On' by Colette Peters and 'Cakes to Desire and Inspire' by Lindy Smith. Haven't gotten them yet, so we'll see....
